Spyros Blentzas' Greek Koulourakia
Ingredients
40 min 4-6 servings
Preparation
Start by preheating the oven to 180 degrees Celsius.
Using a hand-held blender, combine the Lurpak® Unsalted butter and sugar until the mixture is creamy and pale. Then add the orange juice and mix until all the sugar is dissolved.
Next add two eggs (one by one) and combine. Then add the baking powder, baking soda and a handful of flour before mixing together by hand. Keep mixing and adding the flour a handful at a time until a very soft dough starts to form (this should be to the point where the dough doesn’t stick to your hands anymore). Test the dough by seeing if you can roll a long shape out of it and it holds.
Make the dough into small plaits before placing on a tray lined with baking parchment. Use the remaining eggs to create an egg wash for the top, brush over the koulourakia, and then add sesame seeds.
Place them into the oven and bake for 10 minutes or until golden brown. Cool on a wire rack before serving.
