Pizza with Feta Cheese, Capers and Rosemary

Pizza dough:

120g plain flour

1 pinch salt

75g Lurpak®

2 tbsp water

Topping:

50g feta cheese

2 tbsp grated mozzarella cheese

1 red pepper

1 yellow pepper

2 sprigs of rosemary

1 tbsp capers

Pizza with Feta Cheese, Capers and Rosemary

Preparation

Start with the pizza dough: put flour, salt and butter in a blender and mix until it re-sembles breadcrumbs. Add water and blend for 10 seconds. Knead the dough by hand and wrap in kitchen film. Refrigerate for 2 hours.

Roll out the dough on a floured worktop into a rectangular pizza base. Place on a lined baking tray.

Cube the feta cheese and peppers and scatter on the pizza base with the grated cheese, rosemary, capers and black pepper.

Bake the pizza in a pre-heated oven at 220°C for about 15 minutes until it is crisp and golden brown.

Serve the hot pizza with ramsons (wild garlic) or rucola salad.

Tip: for this pizza you can also use boiled potatoes instead of peppers.
