Pre heat the oven to 180°C/160°C Fan/Gas Mark 4.
In a large bowl whisk together the eggs, sugar and lavender.
Sift together the flour and baking powder, add this to the egg mix whisking all of the time.
Whisk the melted Lurpak® Baking into mixture.
Brush your Madeleine tin with a little melted butter in each mould. Spoon one tablespoon of mix into each mould.
Bake in a pre-heated oven for 10 minutes. The Madeleine’s should be light in colour. Remove and allow to cool slightly before gently removing each Madeleine from the tin and placing on a wire cooling rack. Repeat to bake your second batch of Madeleine’s
To make the icing, mix the icing sugar and boiling water in a bowl, the icing should be a drizzling consistency so add a little more boiling water if it’s too thick.
Drizzle the Madeleine’s with icing and sprinkle with the lavender.

Give the Madeline’s a citrus zing by adding the zest of a lemon. Complement this by swapping the boiling water in the icing for fresh lemon juice.
